When I was in NY City the waiter would ask-- bottled water or New York's finest? I loved that.

I've heard of some restaurants ONLY offering bottled water. It caused quite a broohaha here. As you mentioned, its such a huge revenue stream...

I'll always defer to tap water even if unfiltered. But I know plenty of people who'll shell out for the bottled variety. Maybe you should have some bottled water in reserve for those guests.
